Crispy garlic mushrooms

    Double the quantities and you have a fast and easy dish for a dinner party starter. Mushrooms are dipped in a yoghurt and garlic mixture, then coated in breadcrumbs and baked.

    Serves: 3 

    • 6 large mushrooms
    • 2 cloves garlic, crushed
    • 150ml (5 oz) low fat natural yoghurt
    • Salt and freshly ground black pepper, to taste
    • 115g (4 oz) fresh breadcrumbs

    1. Preheat the oven to 200 C / Gas mark 6.
    2. Wipe the mushrooms and remove stalks.
    3. Mix the garlic and yoghurt in a small dish; season with salt and pepper. Dip each mushroom into the yoghurt mixture, covering fully. Coat in breadcrumbs and place the mushrooms on a non-stick baking tray.
    4. Bake in the preheated oven until the mushrooms are tender, 10 to 15 minutes.
    5. Serve with remaining yoghurt.

    Cook's Note

    It is best to prepare the yoghurt mix the day before to develop flavour.
