    About this recipe: I love apple pies and cakes and this is one of my favourite ways to bake them. This cake is fairly simple as well.

    Serves: 8 

    • 225g (8 oz) butter
    • 225g (8 oz) caster sugar
    • 4 large eggs
    • 250g (9 oz) self-raising flour
    • 30g (1 oz) cornflour
    • 340g (12 oz) Bramley apples
    • 1/2 teaspoon lemon juice

    Prep:25min  ›  Cook:30min  ›  Ready in:55min 

    1. Preheat oven to 170 C / Gas 3. Grease 2 sandwich tins.
    2. Cream together butter and sugar. Add egg and flour alternately.
    3. Peel, core and roughly chop 2/3 of the apples. Fold into the batter and stir in lemon juice. Reserve 1/3 of the apples to slice and decorate.
    4. Divide the mixture into the two tins. Arrange the sliced apple on the top of the mixture.
    5. Bake for 30 to 40 minutes. Serve warm with cream.
