About this recipe: This is a recipe for a two tiered banana cake, that is filled with bananas and jam and iced with a delicious lemon icing.

Makes: 1 (18cm) round cake

  • 110g (4 oz) margarine
  • 170g (6 oz) caster sugar
  • 2 eggs
  • 225g (8 oz) self-raising flour, sieved
  • 2 ripe bananas
  • 4 tablespoons jam (raspberry, strawberry or apricot)
  • 1/2 banana, sliced
  • 2 tablespoons lemon juice
  • 225g (8 oz) icing sugar

  1. Preheat oven to 180 C / Gas 4 and lightly grease two 18cm (7 in) sandwich tins.
  2. Cream the margarine and sugar. Add the eggs and flour. Mash the bananas and add them to the mixture. Divide mixture between the two sandwich tins.
  3. Bake for 25 to 30 minutes until the cakes are firm to the touch. Leave to cool.
  4. Mix the jam and half of the banana, and sandwich the two cakes together.
  5. To ice the cake, mix the lemon juice and icing sugar, and spread on top of the cake.
