No bake cheesecake with black cherry topping

    This is a no bake cheesecake that is topped with black cherries. Delicious and no need to heat the oven.

    Serves: 8 

    • 50g (2 oz) butter
    • 110g (4 oz) digestive or ginger biscuits, crushed
    • 110g (4 oz) caster sugar
    • 225g (8 oz) cream cheese
    • 150ml (1/4 pt) double cream
    • Topping
    • 210g (7 1/2 oz) black cherries, pitted
    • 3 tablespoons cornflour
    • 2 teaspoons sugar

    1. Melt butter in saucepan and stir in biscuits and half of the sugar. Press into 20cm (8 in) flan ring and chill, until firm.
    2. In a bowl beat cream cheese and remaining sugar. Lightly whip the cream and fold into cheese and sugar.
    3. Spread cheese mixture over crumb base and chill for 2 hours.
    4. Combine the black cherries, cornflour and sugar. Cook gently in a saucepan till cherries are soft and the mixture has gelled. Cool and spoon over the top of the cheesecake.
