Chocolate fridge cake

    This simple and tasty no-bake chocolate fridge cake with glacé cherries is elegant and quick to make.

    Ingredients
    Makes: 1 cake

    • 2 eggs
    • 225g (8 oz) caster sugar
    • 225g (8 oz) cooking chocolate, melted
    • 225g (8 oz) butter, melted
    • 50g (2 oz) glacé cherries, chopped
    • 50g (2 oz) walnuts, chopped
    • 1 small glass brandy or rum
    • 225g (8 oz) digestive biscuits, crushed

    Method

    1. Grease a cake tin or line with greaseproof paper.
    2. In a large bowl, beat together eggs and sugar, until fluffy. Fold in the melted chocolate and butter, followed by 35g cherries and 35g walnuts, brandy and crushed digestives.
    3. Transfer to the prepared tin and decorate with the remaining cherries and walnuts. Cover and refrigerate until firm.
    4. Remove from tin and serve.
