Marinated button mushrooms

    Button mushrooms are marinated in a mixture of lemon juice, vinegar and herbs with finely chopped shallots. They will keep in perfect condition in the fridge for at least 2 days. Great for buffets, antipasto platter or for simply serving on a salad.

    Serves: 6 

    • 450g button mushrooms
    • 1 tablespoon lemon juice
    • 1 small shallot, finely chopped
    • 4 tablespoons wine vinegar
    • 1 bay leaf
    • 4 tablespoons oil
    • 1 tablespoon tomato ketchup
    • a good pinch mixed herbs
    • salt and finely ground black pepper to taste

    1. Brush mushrooms clean, rinse and place in a large pan; drizzle with lemon juice. Cover with water, bring to the boil and simmer for 2 minutes. Drain and set aside to cool.
    2. In another pan combine onion, vinegar and bay leaf; bring to the boil and simmer gently for 5 minutes.
    3. Remove from heat, add the finely chopped shallot, oil, tomato ketchup and mixed herbs. Season with salt and pepper. Mix well and pour over mushrooms.
    4. Chill for several hours before serving.
