My special chocolate covered toffee

    Loved by all my cousins and myself... This chocolate covered toffee is always a great afternoon treat.

    Makes: 2 kg toffee (approximately)

    • 400g caster sugar
    • 200g soft brown sugar
    • 350g golden syrup
    • 250ml evaporated milk
    • 475ml whipping cream
    • 250g butter
    • 100g milk chocolate, melted

    1. In a medium pot, combine the sugar, brown sugar, golden syrup, milk, cream and butter. When its at 120 degrees C according to a sugar thermometer, remove from the heat.
    2. Stir in the vanilla and transfer to a greased/lined baking tray to cool completely. Then cut the toffee into squares.
    3. Melt the chocolate in a bowl and cool slightly. Dip the toffee into the chocolate using a fork; and place back on greaseproof paper.
    4. Put it in the fridge for the chocolate to set.
    5. Either wrap for friends and family, or enjoy it all for yourself.


    A good candy / sweet thermometer is very handy!

    very tasty... a recipe to remember! If the Toffee doesnt set in hours, try setting overnight. Pouring it into a cling flim lined container.  -  13 Sep 2012


    Can someone please help me. I've been doing this recipe & i can't seem to get it too 120c without it over flowing no matter how little I have in the pan. I transferred it to tins & it's been in the fridge for hours but it's still a caramel constancy. Should I scoop it out & try it in a bigger pan or will this harden over night? Thanks  -  15 Sep 2015
