Melt the butter and mix with the crushed digestives. Pour into a tin, and press down firmly, before transferring to a fridge to set.
Cream the cheese with the icing sugar and vanilla. Melt the white chocolate, allow to cool slightly before pouring in and mixing immediately. Spread on top of the biscuit base, and refrigerate for at least 1 hour before serving.
Top with fresh or tinned fruit, or coulis.
You can make an easy coulis by mixing 1 teaspoon jam with 1 tablebspoon fruit juice (as shown in the photo above).
I loved this, had to adapt it slightly as I am lactofree. I used Pure margarine instead of butter, hobnobs, dark chocolate and increased to 4 tbsp icing sugar. I topped it with red cherries in sauce. Yum! Thanks so much! - 29 Aug 2013
