Wash the chicory then cut in half lengthways and remove the bitter core.
Melt the butter in a large frying pan over a medium heat and lightly brown the chicory halves for about 6 minutes on both sides.
Meanwhile peel and quarter the apples then remove the core and chop into small pieces. Add to the chicory and cook until soft. Taste and add salt, pepper and sugar to your liking.
