Simply spicy chilli con carne

    A perfect make-ahead meal, this chilli con carne only improves as it sits. Serve on a bed of rice or with a jacket potato and cheese.

    Serves: 4 

    • 450g (1 lb) beef mince
    • 1 large onion, sliced
    • 1 teaspoon chilli powder
    • 1 (400g) tin chopped tomatoes
    • 120ml (4 1/2 fl oz) beef stock
    • 1 tablespoon tomato puree
    • salt and freshly ground black pepper, to taste
    • 1 (400g) tin kidney beans, drained and rinsed

    1. In a large pan over medium heat fry the mince, onion and chilli powder until the beef is brown, about 10 minutes.
    2. Stir in the tomatoes, stock, tomato puree, salt and pepper. Bring to the boil then reduce the temperature and simmer for 1 hour, adding the beans halfway through.


    For a spicier dish, add more chilli powder. You can also up the flavour by adding 1 or more teaspoons of ground cumin, dried oregano and dried parsley.
