About this recipe: A cross between a savoury tart and a posh pizza this feta and spinach puff pastry tart takes things to a whole new level. Serve alongside a garnish for a delightful starter.


Serves: 8 

  • 1 packet frozen spinach, thawed and drained
  • 1 pinch salt
  • ground black pepper, to taste
  • ground nutmeg, to taste
  • 2 garlic cloves, minced
  • 200g feta cheese
  • 300ml single cream
  • 2 sheets puff pastry

  1. Preheat oven to 180 C / Gas 4 and line two baking trays with baking parchment.
  2. In a bowl mix spinach with salt, pepper and nutmeg.
  3. In a food processor, blend the garlic, feta and about 300ml cream until smooth. The mixture should have about the same consistency as the spinach (add a little more cream if necessary).
  4. Place the puff pastry on the prepared baking trays. Fold them up on the sides and top with spinach. Spread the cheese mixture over it.
  5. Bake for 30 minutes in the preheated oven, until puff pastry is golden brown.
