An easy way to bake barley for a delicious side dish to accompany beef, pork, chicken and more. The mushrooms add great earthy flavour, but you could get creative and add other veg instead.
Melt the butter in a pan over low heat. Cook the onions, stirring occasionally, until golden brown, about 5 minutes. Add the mushrooms and cook for 3 minutes. Transfer to a ovenproof dish.
Add the barley, salt, pepper and stock; stir to mix.
Bake, covered, in the preheated oven until the barley is tender and the liquid is absorbed, about 40 minutes.
