About this recipe: This beautiful pastry is filled with the comforting flavours of apple, nuts, raisins and cinnamon. This might become your new favourite dessert!

Serves: 6 

  • 340g (12 oz) self-raising flour
  • 170g (6 oz) margarine
  • 3 tablespoons ice-cold water
  • 2 cooking apples - peeled, cored and sliced
  • 55g (2 oz) blanched almonds, chopped
  • 55g (2 oz) dates, chopped
  • 85g (3 oz) raisins
  • 2 tablespoons caster sugar
  • 1 teaspoon ground cinnamon
  • icing sugar for dusting

  1. Preheat the oven to 190 C / Gas 5.
  2. Place the flour in a bowl and rub in margarine until it resembles breadcrumbs. Add 3 tablespoons water and mix to form a firm dough. Turn onto a floured board and knead lightly. Roll out pastry to make a 38cm (15 in) square.
  3. Spread the apples evenly on the pastry, leaving a 2.5cm boarder all the way around. Spread the almonds and dates over the apples; sprinkle on the raisins, sugar and cinnamon.
  4. Brush the edges of the pastry with water. Fold the borders on two opposite sides and roll up in a Swiss roll fashion. Wrap loosely in foil and place on a baking tray.
  5. Bake in the centre of the preheated oven for 1 hour. Open the foil to expose the roll and cook an additional 20 minutes. Lift out of the foil, cool and sprinkle with icing sugar.
