Fresh fruit in butterscotch sauce

    The butterscotch sauce is so easy to make and you can pair it with whatever fresh fruit is in season.

    Ingredients
    Serves: 6 

    • 150g (5 oz) soft brown sugar
    • 150g (5 oz) golden syrup
    • 150ml (1/4 pt) single or double cream
    • 3 drops vanilla extract
    • 750g (1 1/2 lb) fresh fruit

    Method
    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Heat the sugar and syrup in a small pan over medium heat; stir continuously until sugar dissolves. Cook for 5 minutes then stir in the cream and vanilla. Beat until glossy, about 2 minutes.
    2. Serve hot or cold poured over fresh fruit.

    Idea

    For a particularly decadent treat, serve the fruit and butterscotch sauce over meringues or a Pavlova base.
