Delicious chocolate cookies

    A delicious chewy cookie easy for children to make, yet with a sophisticated almond aroma and taste!! Suitable for dairy free and egg free diets - what's not to like?!

    Makes: 6 to 8 cookies

    • 5 tablespoons cocoa powder
    • 5 tablespoons dairy or soya milk
    • 5 tablespoons vegetable or any neutral oil
    • 125g plain flour
    • 1/2 teaspoon salt
    • 1/4 teaspoon almond extract
    • 1/2 teaspoon bicarbonate of soda

    1. Preheat the oven to 160 C / Gas 3. Line a baking tray with baking parchment.
    2. Sift all dry ingredients together. Make a well in centre of bowl. Add oil and milk. Mix together to make a soft dough.
    3. Roll into balls and place onto tray (6 to 8 to a tray as these will expand). Gently flatten.
    4. Bake for 10 to 15 minutes. If you prefer a 'chewy' cookie, take out, and carefully place on cooling tray. Otherwise, leave in a few minutes longer for a crunchier texture.


    It would be interesting to know how you might 'customise' these to your taste. I have substituted 1 tablespoon espresso powder for cocoa, which was nice for the coffee addicts in our family!!

    What about sugar??????  -  07 May 2013


    I made this for my Vegan Sister and her family. It was horrible - no sugar in a cookie. Ended up throwing the batch in the bin.  -  23 Jul 2013


    These are not nice! There is no form of sweetener, either refined sugar or natural sweetener. I made them with my 11 year old nephew who said it was like eating pure cocoa and he is right! I am too thrifty to throw them away so will work them into a trifle to use them up - pity about the recipe!  -  26 Feb 2014
