Place the chocolate chips in the freezer for 20 to 30 minutes. Preheat the oven to 160 C / Gas 3. Grease and line a 20cm round cake tin.
Heat margarine or butter and sugar in a pan until melted; stir and allow to cool. Mash bananas with vanilla in a small bowl. Sift self raising flour, salt and bicarb into the butter mixture; stir in bananas and eggs. Fold in the chocolate chips; tip into prepared tin.
Prepare topping by rubbing 1 tablespoon butter and plain flour together until it resembles breadcrumbs; stir in demerara sugar. Sprinkle topping over prepared cake.
Bake in the preheated oven until the cake springs back when pressed with a finger and a skewer inserted in the centre comes out clean, about 1 to 1 1/2 hours.
Made this for the first time yesterday, with my 1yr old getting involved in baking for the first time and mashing the bananas for me and it was lovely. Really delicious and moist with just the right amount of banana flavour. Served with custard was delish. It was a very simple recipe to follow, only change I made was using a loaf tin instead of a round cake tin. - 04 Jan 2015
