About this recipe: These are little desicated coconut meringues (sometimes called macaroons) sandwiched together with vanilla icing. You can drizzle chocolate over the top if you like.
Very simple, very nice! I cut down on the sugar a bit (about 3oz), still sweet enough. We like them with our mid morning coffee, just as they are - no filling. Keep well in a tin, improve with keeping as the centre goes more gooey! Found a great recipe for the left over yolks called crema catalana, which is a bit like creme caramel. - 12 Mar 2015
