Coconut kisses

    These are little desicated coconut meringues (sometimes called macaroons) sandwiched together with vanilla icing. You can drizzle chocolate over the top if you like.

    Serves: 8 

    • 2 egg whites
    • 150g (5 oz) caster sugar
    • 110g (4 oz) coconut
    • 75g (3 oz) butter
    • 175g (6 oz) finely sifted icing sugar
    • 1/2 teaspoon vanilla essence

    1. Preheat the oven to 150 C / Gas mark 2. Lightly grease a baking tray and line with greaseproof or rice paper.
    2. Place the egg whites in a bowl and beat until stiff. Add the caster sugar and coconut and continue beating just long enough to combine all the ingredients. Drop the mixture on the tray in little rocky heaps.
    3. Bake in the preheated oven until the kisses are faintly tinged with colour, 30 to 40 minutes. Slide the paper onto a wire rack and cool; remove the kisses.
    4. To prepare the butter-cream, beat the butter and icing sugar together until light in colour. Stir in the vanilla essence.
    5. Sandwich the kisses together with the buttercream.

    Very simple, very nice! I cut down on the sugar a bit (about 3oz), still sweet enough. We like them with our mid morning coffee, just as they are - no filling. Keep well in a tin, improve with keeping as the centre goes more gooey! Found a great recipe for the left over yolks called crema catalana, which is a bit like creme caramel.  -  12 Mar 2015
