    About this recipe: An easy, no-cook healthy energy chocolate bar that tastes great. This can also work as a base to any tart of your fancy.

    Ingredients
    Serves: 8 

    • 140g pitted medjool dates
    • 150g cashew nuts
    • 4 tablespoons sultanas or raisins
    • 1 teaspoon cocoa powder (or to taste)
    • 2 teaspoons vanilla or mint extract
    • 1 teaspoon water

    Method
    Prep:10min  ›  Extra time:30min freezing  ›  Ready in:40min 

    1. Combine all the ingredients into a food processor. Purée mixture until it comes together. Add more water if necessary.
    2. When ready spoon mixture out into tin of choice that is lined with baking parchment. Press mixture into tin.
    3. Place in the freezer for minimum of 30 minutes or eat straightaway and enjoy!

    Tip

    The better you compress the mixture, the easier it'll be when taking it out of the freezer and cutting up into sections.
