Preheat the oven to 190 C / Gas 5.
Season the chicken with salt and pepper; place each chicken joint in the centre of a large square of foil. Divide the onions and mushrooms between each square; sprinkle with lemon juice and dot with butter.
Make a double fold along the top of the parcel and double folds at each end; place on baking tin.
Bake in the preheated oven until chicken is cooked through, about 1 hour. Open foil 10 minutes before the end of cooking to brown.
Almost any piece of bone-in chicken will work a treat for this recipe - you can use one or a combination of breasts, thighs and drumsticks. If using boneless chicken, note that you might not get as rich a flavour as a result and you should reduce the cooking time by 10 to 15 minutes.
