About this recipe: Simple to make, yet elegant and impressive, these chicken parcels are divine. Add a tablespoon of single cream to each parcel for a truly delectable dish.

Serves: 4 

  • 4 chicken joints
  • salt and freshly ground black pepper, to taste
  • 1 small onion, sliced
  • 110g (4 oz) mushrooms, quartered
  • 1/2 lemon, juiced
  • 55g (2 oz) butter

  1. Preheat the oven to 190 C / Gas 5.
  2. Season the chicken with salt and pepper; place each chicken joint in the centre of a large square of foil. Divide the onions and mushrooms between each square; sprinkle with lemon juice and dot with butter.
  3. Make a double fold along the top of the parcel and double folds at each end; place on baking tin.
  4. Bake in the preheated oven until chicken is cooked through, about 1 hour. Open foil 10 minutes before the end of cooking to brown.

Chicken joints

Almost any piece of bone-in chicken will work a treat for this recipe - you can use one or a combination of breasts, thighs and drumsticks. If using boneless chicken, note that you might not get as rich a flavour as a result and you should reduce the cooking time by 10 to 15 minutes.
