Sausage hotpot

    Even though it's made with simple ingredients, this flavourful sausage hotpot is a complete and satisfying meal in itself.

    Serves: 4 

    • 450g (1 lb) potatoes, peeled and thinly sliced
    • 2 carrots, sliced
    • 2 onions, chopped
    • salt and freshly ground black pepper, to taste
    • 1 (450g) tin baked beans
    • 225g (1/2 lb) pork sausages
    • 1 (280g) tin oxtail soup

    1. Preheat the oven to 180 C / Gas 4. Lightly grease a 3-pint casserole dish.
    2. Arrange half the potatoes in the base of the casserole; cover with half the onions and all of the carrots. Top with remaining potatoes and onions; season with salt and pepper.
    3. Pour over the baked beans; arrange the sausages on top. Pour over the soup; cover the dish.
    4. Bake in the centre of the preheated oven until the vegetables are tender and the sausages are well browned, about 2 1/2 hours.
