About this recipe: There's nothing better than shortbread, unless it's topped with a buttery, sweet toffee. Go whole hog and top with grated chocolate for a millionaire's shortbread effect, or simply enjoy the deliciousness of the toffee.

Serves: 8 

  • 170g (6 oz) plain flour
  • 110g (4 oz) margarine
  • 55g (2 oz) caster sugar
  • 110g (4 oz) margarine
  • 2 1/2 tablespoons caster sugar
  • 1 tablespoon golden syrup
  • 1 (397g) tin condensed milk
  • 1 bar plain chocolate (optional)

  1. Preheat the oven to 170 C / Gas 3. Lightly grease a Swiss roll tin.
  2. Mix the flour, 110g margarine and 55g sugar in a bowl until well combined. Press into the prepared tin.
  3. Bake in the preheated oven until golden, about 20 minutes.
  4. Meanwhile, melt the 110g margarine, 2 1/2 tablespoons sugar, syrup and condensed milk in a pan. Pour over the shortbread and leave to cool. Grate chocolate on top, if desired.
