    About this recipe: Make a perfect mint jelly to accompany your next roast lamb. You won't be disappointed with this foolproof and classic recipe which uses gelatine and loads of fresh mint.

    Makes: 4 to 6 (250ml) jars

    • 600ml water
    • 450g demerara sugar
    • 4 (7g) packets powdered gelatine
    • 300ml vinegar
    • 30g mint, chopped

    Prep:5min  ›  Cook:30min  ›  Ready in:35min 

    1. Boil the water and sugar for 10 minutes. Reduce the heat and stir in the gelatine; simmer until dissolved.
    2. Stir in the vinegar and mint; remove from heat and steep for 20 minutes. Strain and transfer jelly to warm, sterilised jars; seal.

    I had 7g of fresh mint so I added 3g dried mint, also I only had cider vinegar so used that. Whilst it was steeping for 20 minutes I added green food colouring. Everything else was the same. I had a taste of it before it went into the jars and it was yummy!  -  01 Jan 2015
