Drain tomatoes and peas if using tin peas, saving the juice to make the stock
In a micrcowaveable dish mix rice, chopped onion, red chilli flakes or chilli powder and oil.
Using the saved juice, add water to make 500ml. Mix in chicken stock cubes and pour over rice mix. Cover and microwave till liquid is absorbed and rice cooked.
Add the rest of the ingredients and mix well. Microwave for further 2 minutes and serve.
