About this recipe:
A very tasty rice dish, a family favourite. Serves about 4 depending on appetite but only serves 2 in our house.
1 tin chopped tomatoes
300g frozen peas or 1 tin peas
1 onion, chopped
chilli powder or red chilli flakes to taste
1 teaspoon vegetable oil
2 chicken stock cubes
1 large carrot, chopped
4 rashers bacon, cooked and chopped
- Drain tomatoes and peas if using tin peas, saving the juice to make the stock
- In a micrcowaveable dish mix rice, chopped onion, red chilli flakes or chilli powder and oil.
- Using the saved juice, add water to make 500ml. Mix in chicken stock cubes and pour over rice mix. Cover and microwave till liquid is absorbed and rice cooked.
- Add the rest of the ingredients and mix well. Microwave for further 2 minutes and serve.
