    About this recipe: This is a very simple recipe for seafood pasta with fresh tomatoes, green peppers, tuna and prawns. One of those tasty, quick and easy dishes that's a godsend on a busy midweek night.

    Serves: 4 

    • 340g (12 oz) tagliatelle, spaghetti or pasta shells
    • 85g (3 oz) butter or margarine
    • 1 clove garlic, crushed (optional)
    • 1 small green pepper, thinly sliced
    • 2 tomatoes, chopped
    • 1 tin tuna, drained and roughly flaked
    • 50g (2 oz) peeled and cooked prawns
    • salt and and freshly ground black pepper to taste
    • grated Parmesan cheese to serve

    1. Cook pasta in boiling, salted water until just tender.
    2. Melt butter or margarine in saucepan. Add garlic, if using, and green pepper and cook until soft.
    3. Stir in tomato, tuna and prawns and heat through.
    4. Add drained pasta to pan, season with salt and pepper and mix thoroughly to coat pasta.
    5. Serve immediately with grated Parmesan cheese.
