About this recipe: This is a classic baked cheesecake with a soured cream and sugar topping that adds a nice crunch. The biscuit base has crushed walnuts and cinnamon. Absolutely delicious!

Makes: 1 23cm cheesecake

  • Cheesecake base
  • 125g digestive biscuits, crushed
  • 50g softened butter
  • 50g caster sugar
  • 60g crushed walnuts
  • ½ teaspoon cinnamon
  • Cheesecake filling
  • 225g cream cheese
  • 2 eggs
  • 225g soured cream
  • 100g caster sugar
  • Grated zest from 1 lemon
  • ½ teaspoon vanilla essence
  • Cheesecake topping
  • 2 tablespoons granulated sugar
  • 225g soured cream

Prep:20min  ›  Cook:35min  ›  Extra time:30min cooling  ›  Ready in:1hr25min 

    Cheesecake base:

  1. Preheat oven to 190 C / Gas 5.
  2. Mix together all ingredients for the base and place into a 23cm (9 inch) tin with a loose base. Press crumbs firmly against sides and bottom. Bake for 8 minutes.
  3. Filling:

  4. Mix together all the ingredients for the filling and pour onto biscuit base. Bake at 190 C for 20 minutes. Remove from the oven and cool for 15 minutes.
  5. Cheesecake topping:

  6. Turn oven up to 250 C / Gas 9.
  7. Mix 2 tablespoons sugar and 225g soured cream; spread over the top of the cheesecake. Return to the oven and bake for 5 minutes to brown the top.
  8. Remove and allow to cool. Tastes best when the cake is left in the fridge overnight.
