    About this recipe: Almonds, coconut and chocolate combine to make this a very special nut cake. A great treat for afternoon teatime.

    Ingredients
    Makes: 1 pound cake

    • 110g (4 oz) margarine
    • 110g (4 oz) granulated sugar
    • 2 eggs, beaten
    • 30g (1 oz) plain chocolate, finely grated
    • 110g (4 oz) self raising flour
    • 1 dessertspoon ground almonds
    • 1 dessertspoon desiccated coconut
    • a few drops vanilla extact

    Method

    1. Preheat the oven to 190 C / Gas 5. Grease a 450g (1 lb) loaf tin.
    2. In a large bowl beat together the margarine and sugar until pale and fluffy. Add eggs and beat well. Gradually stir in the chocolate, flour, almonds, coconut and vanilla. Beat until well mixed then spoon into the prepared loaf tin.
    3. Bake for 30 to 40 minutes in the preheated oven until a skewer inserted into the centre come out clean. Remove from the oven and allow to cool before slicing and enjoying.
