Preheat the oven to 180 C / Gas 4. Grease and line a 20cm (8 in) cake tin with baking parchment.
In a large bowl beat the sugar, oil and eggs together until creamy.
In a second bowl mix flour, bicarbonate of soda and cinnamon. Stir into the egg mix.
Add carrots and walnuts. Beat together and transfer to the prepared cake tin.
Bake in the centre of the preheated oven for 1 hour and 10 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and turn out onto a wire rack. Allow to cool before slicing and enjoying.
well what a lovely cake.Had to half the recipe as never had enough of some ingredients and needed something quick and easy,I used mixed nuts as had no walnuts and crushed them and reduced cooking time but keep an eye on it cooking as it took under half the time using less ingredients. but well worth doing and I will be making this again my son loved it.a good tip; be nice to have had the buttercream icing to go with it too. but lovely and recommended. - 18 Jul 2016
