Tasty fruit cake

    Make this moist fruit cake with your favourite fruits. For a Christmas cake add 450g (1 lb) more of mixed fruit and 3 tablespoons of brandy, a teaspoon each of rum, almond and vanilla extracts and bake for 2 to 2 1/2 hours at 140-150 C.

    Makes: 1 cake

    • 200g granulated sugar
    • 425g tinned pineapple, strained and pureed
    • 450g mixed fruit
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon mixed spice
    • 110g butter
    • 125g plain flour
    • 125g self raising flour
    • 2 eggs

    1. Preheat oven to 170 C / Gas 3 and grease and line a deep, round cake tin.
    2. Place sugar, pineapple, mixed fruit, bicarbonate of soda, mixed spice and butter in a saucepan. Bring to boil. Simmer for 3 minutes. Remove from heat and cool completely.
    3. Sift flour together and mix into cold fruit. Mix with beaten eggs. Place in prepared tin and bake in the preheated oven for 1 1/2 hours.
