About this recipe:
We actually call these chocolate fork biscuits in our house because you roll the mixture into balls and then flatten them with a fork!
225g butter or cooking margarine
110g caster sugar
1 teaspoon vanilla essence
225g self raising flour
icing sugar and chopped nuts (optional)
- Preheat the oven to 180 C / Gas mark 4. Line 2 trays with baking paper.
- Cream butter with sugar and vanilla essence in a mixing bowl. Mix in flour and cocoa.
- Divide into pieces the size of a walnut and roll into balls. Place on prepared baking tray and flatten with a fork dipped in cold water.
- Bake for 7-10 minutes until the cookies start to look firm. Dust with icing sugar or sprinkle with chopped nuts if you like.
what is the finish on these? can you do intricate pipework on top?

I tried to make these by substituting the flour for gluten free flour but the biscuits just crumble. does anyone know what else I need to add to make the texture right
