Chocolate biscuits

    We actually call these chocolate fork biscuits in our house because you roll the mixture into balls and then flatten them with a fork!

    Serves: 30 

    • 225g butter or cooking margarine
    • 110g caster sugar
    • 1 teaspoon vanilla essence
    • 225g self raising flour
    • 30g cocoa
    • icing sugar and chopped nuts (optional)

    1. Preheat the oven to 180 C / Gas mark 4. Line 2 trays with baking paper.
    2. Cream butter with sugar and vanilla essence in a mixing bowl. Mix in flour and cocoa.
    3. Divide into pieces the size of a walnut and roll into balls. Place on prepared baking tray and flatten with a fork dipped in cold water.
    4. Bake for 7-10 minutes until the cookies start to look firm. Dust with icing sugar or sprinkle with chopped nuts if you like.

    I tried to make these by substituting the flour for gluten free flour but the biscuits just crumble. does anyone know what else I need to add to make the texture right  -  12 Apr 2014
