Nikki's yummy tomato soup

    My girls can wolf down bowls of this tomato soup. Serve it with good crusty bread. You could also use chicken stock.

    Serves: 6 

    • 1 to 2 tablespoons of olive oil
    • 2 onions, finely chopped
    • 6 carrots, peeled and grated
    • 2 garlic cloves, mashed
    • 4 tins chopped tomatoes
    • 2 tablespoons tomato puree
    • 600ml (1 pint) veg stock

    Prep:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Heat olive oil in a large pan. Add onion and grated carrot; stir and cook till soft. Add garlic, tomatoes, tomato puree and vegetable stock. Simmer until all the veg is soft, about 20 minutes.
    2. Blend till smooth with a hand held blender, or in batches in a food processor.
