Slow cooked chicken thighs

    A minimal input frugal dish, using store cupboard ingredients. I serve it with rice and vegetables cooked in chicken stock.

    Serves: 6 

    • 2 chicken OXO® cubes
    • 1/2 large onion
    • 1kg chicken thighs, skinned
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon dried thyme
    • 2 teaspoon paprika
    • 2 teaspoon pul briber (Turkish mild red pepper flakes)
    • 4 tablespoons olive oil
    • 3 teaspoon garlic powder or granules

    1. Crush the stock cubes into powder (I do this with pestle and mortar).
    2. Quarter the onion and place in the slow cooker. Add all the other ingredients and marinate the chicken. You could at this point leave overnight in the fridge. I have not used salt as OXO® is quite salty.
    3. Cook in slow cooker for 5 to 6 hours.


    Please adjust spices and herbs according to taste, I have left it quite mild due to young kids but I will add more chilli flakes when I plate my own up.

    Easy recipe to make. Useful for when low on ingredients. Not sure it will be a regular for us though.  -  09 Feb 2014
