Courgette and feta filo pie

    Gently cook slices of courgette or marrow, add some feta cheese, breadcrumbs and a little dill, then bake inside some filo pastry and Bob's your uncle! A great way to use up all those extra courgettes!

    Serves: 6 

    • 1 packet filo pastry
    • 900g (2 lbs) courgettes, sliced
    • 250g melted butter or oil
    • 3 eggs, beaten
    • 225g (8 oz) feta cheese, crumbled
    • 4 tablespoons breadcrumbs
    • 1 tablespoon finely chopped fresh dill
    • Salt and freshly ground black pepper, to taste

    1. Heat half the butter or oil in a large frying pan over medium heat. Gently cook the courgettes, covered, until very soft, about 15 minutes. Remove from the heat and stir in the eggs, cheese, breadcrumbs and dill; season with salt and pepper.
    2. Preheat the oven to 180 C / Gas 4. Lightly grease a baking dish.
    3. Brush each sheet of filo pastry with the remaining oil. Place 2/3 of the pastry in the baking dish and top with courgette mixture. Top with remaining filo pastry and tuck the ends under to hold in filling.
    4. Bake in the preheated oven until the pastry is golden brown, 30 to 35 minutes.
