I added 1/4 cup of applesauce to substitute for one of the eggs (I only had 2 eggs in the fridge)! I wanted to make a coffee sponge cake, so omitted the milk and added coffee instead Worked out well, didn't rise as much as I would have liked, but I think the cake tin I used was too big.
