Winter carrot and coriander soup

    This carrot and coriander soup is a lovely, easy soup that is perfect to enjoy over the winter months!

    Serves: 4 

    • 3 carrots, chopped
    • 1/2 parsnip, chopped
    • 1/2 onion, diced
    • 1 handful peeled and diced swede
    • 900ml (1 1/2 pints) vegetable stock
    • 1 handful fresh coriander, ripped up
    • drizzle of oil

    Prep:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Heat the oil and add all of the veg. Cook for about 5 minutes, till the veg is just softened.
    2. Add the veg stock, cover with a lid and bring to boil. Reduce to a simmer and cook until all the veg is cooked nice and soft, adding the coriander in the last 5 minutes of cooking.
    3. Ladle into a blender and blitz until smooth. The texture will still have bits in which is lovely, blitz for longer until you get the texture you want.

    Cook's note

    You can choose to peel the carrot and parsnip, or to chop it unpeeled.
