Put 200g of macaroni into a pan with boiling water on medium heat for 20 minutes, going back every now and then to stir to avoid it sticking to the pan. Once macaroni is tender, drain well.
Next put 1 to 2 tablespoons of butter into another pan on low heat till melted. Once melted remove from heat, add cornflour and mix into a paste. Add small amounts of milk, mixing to avoid lumps. Once all milk is mixed in, return to heat and set on medium and stir constantly until thick and runny. Remove from heat and add grated cheese and return to heat until cheese has melted. Add a pinch of salt and pepper and 1 teaspoon of mustard (optional) and remove from heat.
Once it's all cooked place macaroni and cheese sauce into a casserole dish and mix together until macaroni is coated. Add extra grated cheese on top and put in the oven on the middle shelf on 200 C / Gas 6 for 20 to 25 minutes.
Once the cheese has melted and gone golden brown and crisp take out of the oven (be careful it's hot!). Allow to cool on the side for 20 minutes before serving.
My family loved it!! I added chopped ham to the pasta and used wholegrain mustard instead of English, I also added sliced tomatoes on top of the pasta and covered in grated cheddar and baked in the oven for for the allocated time, will definitely be making this again! 👍 - 16 Dec 2014
