Chunky chocolate fudge

    This chocolate fudge is packed with juicy sultanas and chunks of walnuts and Rich tea® biscuits. You can top it with a layer of melted chocolate and sprinkle nuts on top if you like.

    Makes: 1 swiss roll tin

    • 110g butter
    • 110g caster sugar
    • 1 egg, beaten
    • 1 tablespoon cocoa
    • 100g chopped walnuts
    • 140g sultanas
    • 200g Rich tea® biscuits, broken up or crushed
    • about 225g milk or plain chocolate, melted
    • chopped nuts

    1. Combine butter, sugar and cocoa in a pan and heat. As they heat, add the beaten egg and mix thoroughly, bringing the mixture to a boil.
    2. Remove from the heat and stir in the crushed biscuits, nuts and sultanas.
    3. Press the mixture into a Swiss roll tin, smoothing it out so it's level. Leave to cool.
    4. Coat with melted chocolate and sprinkle with chopped nuts.
