Banana teabread

    The addition of natural yoghurt helps make this banana cake loaf nice and moist. Best to leave it overnight before serving.

    Makes: 1 loaf

    • 225g self-raising flour
    • Pinch of salt
    • 75g cooking margarine, plus more for greasing
    • 110g sugar
    • 1 egg, beaten
    • 2 tablespoons yoghurt
    • 2 ripe bananas, mashed

    1. Preheat the oven to 180 C / Gas 4. Lightly grease and flour a loaf tin.
    2. Sift the flour and salt into a bowl. Rub in the margarine with fingertips until it resembles breadcrumbs; mix in sugar.
    3. Combine the egg, yoghurt and banana in a bowl; mix well. Fold banana mixture into flour mixture until just combined; pour into prepared loaf tin.
    4. Bake in the preheated oven until a skewer inserted into the centre of the loaf comes out clean, about 60 minutes. Leave loaf to cool overnight before serving.
