Pasta with prawns, courgette and cherry tomatoes

About this recipe: Courgettes, prawns and tomatoes are cooked in garlic-flavoured oil, then tossed with hot pasta to create an easy but very tasty dinner.

Serves: 4 

  • 375g pasta, such as fusilli
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, peeled but kept whole
  • 3 small courgettes, sliced
  • 2 tablespoons freshly chopped parsley
  • 20 shelled prawns
  • 60 - 80ml white wine
  • 200g cherry tomatoes, sliced in half
  • Salt and freshly ground black pepper, to taste

  1. Cook pasta according to package instructions; drain.
  2. Heat oil in a frying pan over medium high heat. Add garlic clove and cook until it has browned all over and released its flavour; remove. Add courgette and cook for a few minutes to soften. Stir in fresh parsley.
  3. Add prawns and cook for 1 or 2 minutes. Pour in wine and add cherry tomatoes. Cook for 2 or 3 minutes, season to taste. Toss with warm pasta and serve.
