Charleston pumpkin pie

    A classic pumkin pie recipe from the American South. Use pumpkin puree from a tin or cook and mash a fresh pumpkin.

    Makes: 1 pumpkin pie

    • 250g stewed pumpkin
    • 220g dark brown soft sugar
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cinnamon
    • ¼ teaspoon salt
    • 2 eggs
    • 470ml milk
    • 2 tablespoons melted butter or margarine
    • 1 (23cm) pastry case

    1. Preheat oven to 220 C / Gas 7.
    2. Put the pumpkin in a bowl, add sugar and seasonings and mix well. Add lightly beaten eggs and milk. Stir in melted butter. Pour into the pastry case.
    3. Bake in the preheated oven for 5 minutes. Lower heat to 180 C / Gas 4 and bake for about 45 minutes until filling is set. (A knife inserted in centre will come out clean when the middle is done.) Serve thoroughly cold.
