Creamy cheesy pasta

    Smooth but rich in flavour, and absolutely great if you want to forget your diet for the night! Almost any pasta shape will work for this recipe.

    Serves: 2 

    • penne pasta (handful per person)
    • 1 onion, finely diced
    • 1/2 teaspoon salt and pepper
    • 1/2 tub mascarpone cheese
    • 1 tub single cream
    • 2 cloves garlic, crushed
    • 6 rashers unsmoked bacon

    1. In large pan boil salted water, add pasta cook until slightly firm.
    2. In separate pan sweat off onions in a little butter or oil. Once soft, add salt, pepper, mascarpone cheese, cream and garlic.
    3. Fry off bacon and cut into small chunks then add to the sauce mixture.
    4. Once penne pasta is cooked, drain thoroughly and add to sauce. Mix well and enjoy!
