    About this recipe: Fruit and spice and all things nice! These little buns don't have to look perfect which makes it a lot easier. They'll be eaten up in no time too.

    Makes: 1 dozen rock cakes

    • 300g self-raising flour
    • 1/4 teaspoon mixed spice
    • 85g butter
    • 85g caster sugar
    • 30g sultanas
    • 30g currants
    • 1 tablespoon mixed peel
    • 1 egg, beaten
    • 125ml milk

    1. Preheat the oven to 200 C / Gas mark 6. Lightly grease or line a baking tray with baking paper.
    2. Sift flour and mixed spice together; rub butter into flour with fingertips until is resembles breadcrumbs. Add sugar, fruit and mixed peel. Mix in egg and enough milk to form a stiff dough. Drop spoonfuls on to the prepared tin.
    3. Bake in the preheated oven until golden brown, about 10 to 15 minutes. Cook on a wire rack.
