Peel pumpkin then cut it into large chunks. Steam for 15 minutes or until just tender. Season with a dash of salt.
Pour 8cm (3 in) of oil into a deep frying pan or deep-fryer and heat to 180 degrees C.
Combine flour, water and the remaining salt to form a batter. Dip the pumpkin chunks into the batter then into the breadcrumbs and place carefully into the hot oil (use a perforated spoon or such like for this move, it is safer).
Deep fry until golden and crisp, then place to drain on kitchen paper.
Serve accompanied with small mounds of daikon radish seasoned lightly with shoyu for dipping.
Tip
Daikon is also called 'mooli' in South Asia and can be found in Asian markets.
