Chocolate cake traybake with chocolate icing

    This is an easy chocolate cake traybake that's topped with a chocolate icing. Sprinkle chopped walnuts or hazelnuts on top, if you like.

    Ingredients

    • Traybake cake
    • 85g butter, softened
    • 85g caster sugar
    • 1 heaped tablespoon Bournville cocoa powder
    • 110g plain flour
    • 1 egg
    • 1 or 2 drops vanilla extract
    • 2 tablespoons milk
    • 1/4 teaspoon baking powder
    • Icing
    • 40g plain chocolate, broken into pieces
    • 1 1/2 tablespoons warm water or milk
    • 110g icing sugar

    Method

    1. Preheat oven to 180 C / Gas 4. Grease and line a shallow traybake tin.
    2. Beat butter and sugar together until light and fluffy; stir in cocoa. Sieve flour and add to the butter mixture. Beat egg and vanilla extract together, then add to the butter mixture. Stir in milk and baking powder; spread mixture into prepared tin.
    3. Bake in the preheated oven until springy; about 25 minutes. Allow to cool completely on a wire rack.
    4. To prepare the icing, place chocolate and water in a pan; melt over a gentle heat. Add sugar and beat to make it shiny. Spread over cooled cake with a knife dipped in hot water; slice into fingers about 3cm wide.
