Straight pumpkin soup

    Nothing but pumpkin, a little butter and milk make this pumpkin soup taste especially good. Season to taste and serve hot.

    Serves: 8 

    • 1 pumpkin
    • 30g (1 oz) butter
    • milk to taste
    • salt and pepper to taste
    • 1 pinch nutmeg

    1. Peel and chop pumpkin. Place into a saucepan, cover with water and boil till tender. Pass through a sieve or liquidiser. Save the water in which the pumpkin was cooked.
    2. Heat an ounce of butter in a pan, add pumpkin, milk and a little of the water if needed. Add salt and pepper. Heat gently to bubbling point. Serve sprinkled with nutmeg.

    I was looking for a simple soup without all the veggies and spices, this one fit the bill and is delish. Thank you I used a can of pumpkin instead of a whole one.  -  07 May 2014
