    Makes: 8 fairy cakes

    • Fairy cakes
    • 60g butter
    • 60g caster sugar
    • 1 egg, beaten
    • 100g self-raising flour
    • 60g shelled walnuts, roughly chopped
    • splash of milk
    • Icing
    • 100g icing sugar, or as needed
    • 3 tablespoons lemon juice, or as needed

    1. Preheat oven to 220 C / Gas 7. Grease a cupcake tin or line with paper cases.
    2. Beat the butter and sugar together until soft and creamy; stir in the egg and beat until smooth. Gradually add the flour until well combined; fold in the walnuts, reserving some for decoration, and enough milk to make a mixture that will drop from the spoon.
    3. Spoon mixture nto paper cases, filling 3/4 full; bake in the preheated oven until a skewer inserted into the centre of a fairy cake comes out clean, 10 to 12 minutes. Cool fairy cakes on a wire rack.
    4. To make the icing; mix lemon juice with enough icing sugar to form a thick icing. Spoon a little icing on top of each cooled fairy cake; decorate with walnuts.
