    For your next buffet, try something different! Put out this Brazilian glazed ham, decorated with fruit if desired, and watch guests go back for seconds... and thirds!

    Ingredients
    Serves: 10 

    • 1 cooked smoked gammon joint
    • whole cloves, as needed
    • 2 tablespoons melted butter
    • 1 tablespoon Worcestershire sauce
    • 175g honey
    • 1 1/2 tablespoons mustard
    • 250ml orange juice
    • 250ml Champagne

    Method

    1. Score the surface of the joint in a diamond pattern, and insert the cloves in the centre of each diamond.
    2. In a bowl, combine the butter, Worcestershire sauce, honey and mustard. In a measuring jug, combine the orange juice and Champagne.
    3. Place the joint in a roasting tin and cover with the butter mixture. Pour over half of the Champagne mixture.
    4. Bake for 2 hours at 180 C / Gas 4. Baste occasionally with the remaining Champagne mixture.

    To serve

    For a very Brazilian presentation, place the ham on a serving platter and decorate with cocktail cherries, sliced peaches, prunes and pineapple slices.
