Cypriot aubergine with steak mince

    A recipe for an aubergine dish from Cyprus. The vegetable is slowly pan fried with minced steak, peppers and tomatoes.

    • 1 large aubergine
    • salt
    • olive oil, for frying
    • 350g (3/4 lb) minced steak
    • 2 onions, chopped
    • 1 green or red pepper, sliced
    • tomato puree or fresh tomatoes to liking
    • 1 garlic clove, minced (optional)

    1. Slice one large aubergine. Cover with salt, let sweat for 20 minutes then rinse in cold water and dry.
    2. Heat a little oil in a strong pan, then cook together very slowly the sliced aubergine, minced steak, onions, green or red pepper, tomato puree or fresh tomatoes. A little garlic may be added if liked.
