Old fashioned pumpkin loaf cake

    This delicious, sweet, spiced pumpkin loaf cake recipe is enough for two 500g loaves or one large 1kg loaf. Make sure to adjust the baking time accordingly.

    Makes: 2 loaf cakes

    • 500g cooked pumpkin, mashed well
    • 4 eggs, beaten
    • 175ml vegetable oil
    • 120ml water
    • 500g plain flour
    • 1 teaspoon salt
    • 600g sugar
    • 2 teaspoons bicarb of soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/2 teaspoon ground ginger

    1. Preheat oven to 190 C / Gas 5. Grease two 22x10cm (8.5x4 in) loaf tins.
    2. Mix pumpkin, eggs, oil and water in a large bowl.
    3. Sift dry ingredients together in a separate bowl and add gradually to the pumpkin mixture, mixing thoroughly.
    4. Distribute mixture evenly between the 2 prepared loaf tins.
    5. Bake in the preheated oven for 40-45 minutes until a skewer inserted in the middle comes out clean.
