If you would like to remove some of the fat from the pepperoni, pop it on some kitchen roll and place it in the microwave for a few seconds until the fat is drawn out. Keeping an eye on it so it does not burn. Place pepperoni on wrap, then cover with grated cheese. I like to put a lot of strong cheese onto mine. Add a few pieces of pineapple.
Wrap it up and place in the fridge overnight to give the flavours a chance to soak into each other. Eat it cold or place it on a panini press and eat warm.
