Easy peasy fish cakes

    These delicious, budget friendly fish cakes are easy to make and fantastically crispy. You can use ready-made mashed potato or make your own.

    Crisp 'n Dry

    Serves: 4 

    • 2 tins tuna, drained
    • 1 onion, diced
    • 400g mashed potatoes
    • flour for dusting
    • 2 eggs, beaten
    • 100g breadcrumbs
    • 100ml Crisp 'n Dry cooking oil
    • 50ml milk
    • salt and pepper to taste

    1. In a bowl, mix the onion, tuna and potato then using floured hands, shape into 8 cakes.
    2. Lightly dust with flour and dip into eggs and then breadcrumbs. Chill for 30 minutes.
    3. Heat 1cm Crisp 'n Dry cooking oil in a frying pan on a high heat.
    4. Fry the fish cakes in batches for 3 minutes on both sides and drain onto paper.

    Make your own mash:

    Peel and halve 400g potatoes.
    Place in pan and cover in boiling water.
    Boil rapidly for 15 minutes, or until soft.
    Drain and mash with some salt and pepper and 50ml milk to a smooth consistency.

    To bake the fish cakes:

    You can also bake these fish cakes. Simply drizzle with Crisp 'n Dry, place onto a baking tray and cook for 20 minutes at 200 C / Gas 6.

    Good but the cakes were very crumbly when rolling in breadcrumbs so it was hard to handle.  -  05 Jun 2015

    Tried this recipe tonight for my bf and myself. Neither of us are big fans of fishcakes in general but we both loved this recipe. We made big ones, served them with Reggae Reggae sauce and had a decent sized salad on the side. Would reccomend!  -  28 Jun 2013
